PRECIOUS LUMPIA
(Rose N. Tubal)
Ingredients:
1pc Green Bell Pepper (shredded)
1pc Cucumber (shredded)
5pcs Onion Leaks
1cup Coconut Meat (thinly sliced)
1pc Carrot (shredded)
1pc Baguio Pechay
1 pack Vietnamese rice wrapper (Lumpia wrapper)
Instructions:
1. Soak all the vegetable in a small basin of water activated with charcoal for 10-15 minutes. You may also add ice to keep the vegetables crispy. You may also use Calamansi instead of charcoal.
2. Shred all the vegetables except for the Pechay.
3. Cut the Onion Leaks lengthwise
4. Moisten the Lumpia wrapper.
5. Arrange the vegetables: Bell Pepper, Cucumber, Carrots, Coconut Meat and the onion Leaks on the Lumpia wrapper.
6. Wrap the ararngement in the Lumpia wrapper.
7. Top the arrangement with one (1) Pechay leaf.
8. Add the dressing, garnish and serve.
Dressing Ingredients:
1/4 cup Pili Nut (raw and peeled)
2tbsp. Sunflower Seeds (Peeled)
2tbsp. Sesame Seeds
1/2 cup Buko/Coconut Juice
1/2 cup Lemon/Calamansi Juice
1 1/2 tbsp. Garlic (minced)
2tbsp. Honey (raw)
2tbsp. Soy Sauce
2tbsp. Olive Oil
2tbsp. Tarragon Leaves (Fresh)
Instruction:
1. Blend all the ingredients together until fluffy.
This dish is great for people on a 100% raw diet. Nothing is cooked and everything preserves the natural flavors and nutrients of all the ingredients.
